Moist banana cake

I made this today. I just love making good use to ageing bananas, and this recipe is defiantly a winner. I'm not much of a baker, but this recipe is just so easy and fool-proof. You can eat it for breakfast, topped with berries and natural yoghurt or indulge and spread it with butter for afternoon tea.   

Here's how to make THIS ::

Moist banana cake

250g soft butter
1 cup castor sugar
3 eggs
3 over-ripe bananas, finely mashed
2 cups self-raising flour


Cream butter and sugar in small bowl with electric mixer until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in bananas, then sifted flour. Pour into well greased 20cm pan, bake at 180°C for about 45 minutes. Stand a few minutes before turning cake onto wire rack to cool.

Eat hot or cold!  Ta-dah!
